Ginger, a high-value spice and medicinal herb, plays a vital role in the agricultural economy. However, post-harvest handling remains a challenge for farmers in ensuring quality, reducing losses, and maximizing market value. The Agricultural Technology Management Agency (ATMA), Kobulong block, carried out a training program on “Post-Harvest Handling and Value Addition of Ginger” at Mopungchuket village on February 15, 2025.
The resource person, Temjeninla Longkumer, ATM of Kobulong block, provided crucial insights to local farmers on handling ginger after harvest and exploring its economic potential.
She shared detailed practical tips for ensuring that ginger is properly processed and stored to preserve its freshness and market value. She also discussed the importance of proper harvesting techniques, cleaning, sorting, curing, and drying. The farmers were encouraged to explore value-added opportunities such as ginger candy, ginger ale, and ginger powder. Processing ginger into these value-added products can significantly increase its market value.
Later, hands-on training on making ginger candy and ginger ale was conducted. In addition, the farmers were informed about packaging, storage, and transportation.
At the end, packaging materials were distributed to the farmers. A total of 22 farmers, along with ATMA staff, attended the demonstration program.
